Victoria’s Kitchen is thrilled to say that the fabulous Mark Tilling is back for 2019!
Mark’s team won the first BBC2’s Bake Off Creme De La Creme, and Mark himself has many awards including winning the UK Chocolate Masters from 2006 to 2008, and coming 12th in 2007 and 7th in 2009 at the finals of the World Chocolate Masters. This is a wonderful opportunity to be taught by one of the World’s leading Chocolatiers, in a small group environment.
In this class, you will focus on the beautiful Mirror Glaze. These creations are absolutely gorgeous but very tricky!
Learn how to make two different mirror glazes, one colour and one chocolate, and Mark will guide you through the process step by step in a small class.
Mark will provide you with pre-made mousses and you will glaze them in class. He will demonstrate in class how make the mousses, but for them to be used in class they must be frozen overnight. You will leave with 5 delicious and beautiful creations to take home along with a recipe and tips sheet.
In this class:
- Learn how to pour the glaze over the mousses the correct way
- Learn how to temper chocolate
- Learn how to make decorations like feathers, colourful chocolate squares
In the class you will make:
- Notes on tempered chocolate
- 4 glazed individual glazed mousses glazed in the cocoa powder
- 1 large glazed mousses glazed in the white chocolate and coloured glaze
Length of class: Approximately 6 hours
