My regular students will know I am slightly obsessed with Eclairs and have been wanting a class developed for some time, and here it is! Whether you are looking to improve your Choux Pastry skills, or have never even made it before – this workshop will provide you with the knowledge and expertise to make these gorgeous classics time and time again.
The workshop will have a combination of hands on and demonstration activities – but the group will be small and you will get plenty of one to one time with our Cordon Bleu trained Pastry Chef Umit. You will make, bake and decorate six eclairs in three different flavours (these may change seasonally). In pairs you will make your own Choux Pastry, Creme Patissiere, Fruit Compote and Fondant Icing and there will be demonstrations of Caramel and Cinnamon Crumble.
For the first dates listed the flavours will be: Apple Crumble, Rose & Raspberry and Golden Chocolate, Caramel & Praline.
Everything is provided in class, you just turn up and make your beautiful Artisan Eclairs! You will take your 6 bakes away all beautifully boxed up with a recipe and tips sheet.
In class you will:
- Make your own Choux Pastry from scratch & bake your eclairs
- Make your own Creme Patissiere along with flavoured variations including Chocolate Praline
- Make your own Apple Compote
- Make and colour your own glaze
- Demonstrations will include Caramel and Cinnamon Crumble
- Put everything together beautifully!
Level: Beginner to intermediate. Length of class: Approximately 4 hours
What do you need to bring:
Nothing! Just a bite to eat for a short lunch break and a note book.
Aprons are provided to use on the day, and light refreshments will be served throughout the class.
Classes are a maximum of 8 students.
